Cozy Rosemary Pork Stew For Two

 

IMG_3572A little while back my sister and fam had gone on vacation for fall break and so I had the house all to myself for a few days.  And I don’t know about you but I can tend to not want to cook very extensive meals when it comes to just me and Liza eating, but this day I was inspired by my new little mini crock pot to make something yummy.  And since I had just bought some amazing local pork chops from the Rutherford County Farmers Market and it was a little dreary outside, a cozy pork stew sounded amazing!

So I really just wanted to share this simple recipe option for when it’s just you and one other.. and it really is pretty easy and not a lot of mess cause it takes just one pan.  Oh… and if it’s you and one other and some more others.. then you could easily just double or triple the recipe to make it family style!


Ingredients

2 thick cut pork chops

1/4 cup flour

1/2- 1 teaspoon salt to taste

1/2 teaspoon pepper

1 teaspoon paprika

1 large potato

1 large carrot

1/2 an onion

2 stems each fresh oregano and rosemary (use 1/2 tsp dried oregano and 1 tsp dried rosemary if you don’t have fresh on hand)

2 Tablespoons oil of your choice (I used butter)

1 cup beef broth (or 1 cup water with 1 cube boullion)


Directions

  • Place pork chops in a dish to season and flour.
  • Coat evenly on both sides with salt, pepper, and paprika
  • Then coat with flour
  • Roughly chop potato, carrots, onion, and garlic
  • Heat oil in a large skillet.. my fav skillet is my cast iron!
  • Place pork chops into medium/hot oil and let brown on both sides.. about 2 min each side. You’re not cooking them through just browning the outside.
  • Place chops in your crock pot.. I used my new cute little new crock.. perfect for a meal for two:) But you can use a larger one too.. whatever you have.
  • In the same pan and same oil add your onions and carrots, sauté for a couple minutes and then add garlic, potatoes and herbs.  Sauté another couple minutes.
  • Then add cup of broth or boulion water.. you can really use chicken or beef broth it will taste great either way
  • Bring to a boil and scrap all the yummy bits off the bottom of pan
  • Pour all into the crock pot
  • Cover with lid and let cook on high for about 4-5 hours or on low for 6-8 hours
  • Then enjoy the deliciousness!!

 

A perfect cozy meal for two.. you can serve with rolls or toast, or add a dollop of sour cream and extra herbs if you like.  This is so versatile too.. use whatever you have available in the fridge with the same process.. chicken. beef, routabega, cabbage, beans.. endless possibilities and it will almost always be super yummy!!

Healthy But Not, Apple Blueberry Muffins

I mean, lets face it.. there is really no healthy muffin that tastes really good, at least not without giving it a taste handicap because it is healthy for you, right?!  So this is my version of a healthy muffin but really its not that healthy.. however they are amazingly good, and you can kindof feel a little guilt free since they have carrots, apples and blueberries in them, and a little less sugar than your typical muffin.  These are great for an on the go breakfast or snack that will keep you going for awhile and my favorite is to enjoy it with a cup of coffee.  But I also love these as a great gift to bring to new mommies.. we all know how hungry new mommies get while taking care of and feeding their newborns, and these are the perfect snack to keep her going and to conquer that sweet tooth as well.. especially after that middle of the night baby feeding when you are starving but have no energy what so ever to pull something together.  Try it.. and you tell me if its too good to be healthy or not?! Real Deal Monkey Bread with Maple Cream Cheese Icing

Mmmmmmmmmm!

I love monkey bread!! My mom used to make it all the time growing up as a special treat especially on Saturday mornings while we would be watching Smurfs with my Dad.  Typically monkey bread is made with canned biscuit dough and it is so good, even though I hate the thought of what is in those store bought biscuits.  I honestly doubted my sister when she said she wanted to try making it with her biscuit dough recipe instead.  I just didn’t think the texture would come out right.. but to my surprise it turned out to be so amazingly decadent.  Each piece just melted in your mouth.. it was almost like eating chunks of really amazing cake donut coated in buttery cinnamon sugary goodness.  I think the dough recipe actually would make really great donuts if you fried it.. I’m gonna have to try that soon!  Anyway, I hope you try this and give me your thoughts on it!!  It’s a great kid pleaser, or guest will love you if they wake up to this treat in the morning.
